The Easy Sunday Dinner~ Rainbow Fritters 🌈

Usually a Sunday night involves some kind of fritter and salad combo in our house. They are quick, use whatever you’ve got going and are delish. They are GF with the buckwheat flour but use whatever kind you like.

These ones have:
• 2 small grated zucchini
• 1 grated carrot
• 2 steamed corns
• Heaps of basil
• Dill and thyme (use any herbs!)
• Feta
• Chives (I’d usually do a couple of springers or some leek)
• Pepper
• Chilli flakes
• Cumin seeds or ground
• 2 eggs
• 1/3 cup buckwheat flour
~ also great with some frozen peas or grated beetroot !

METHOD:
Mix all ingredients in a bowl, pan cook or use the bbq with a little olive oil. Serve with side salad or have on some wraps with many condiments.
